Chocolate Stout Beer and Pretzel Caramels - Chocolate stouts are beers brewed from a blend of aromatic malts that are specially roasted to have the taste profile of dark chocolate- which is a perfect match for Caramel candies!
**THIS BEER & CARAMEL PRETZEL IS NON ALCOHOLIC - THE BEER IS REDUCED OVER A SIMMER ON THE STOVETOP TO EVAPORATE THE ALCOHOL, LIKE RUM IT ADDS A NICE DEPTH OF TASTE TO THE CARAMELS**
Our caramel candies have just sugar, cream, butter, glucose, spices, chocolate stout beer, pretzels, and a dash of sea salt. We cook this mixture for over an hour to get a uniquely delicious smooth chewy caramel with a complex flavor profile marrying the sweet and savory.
The small batches we make these in, coupled with fresh local ingredients (we DO NOT used canned and processed products like condensed milk or evaporated milk) makes these caramels very distinct than what is sold in stores.
▧Nougat Description:
Egg whites, sugar, and glucose are whipped to a fine fluffy consistency to create our soft French Nougats. Afterwards, our current line of flavors (vanilla, cafe au lait, cranberries, strawberries, cherry) are mixed into the nougat. We then add our almonds (or pistachios), which we roast in small batches to bring out the fullness of its flavor.
The smooth flavors of our nougat candy pairs perfectly with our fresh roasted almonds and pistachios- blurring the boundaries between candy and dessert. These nougats burst with flavor- deliciously soft, sweet, fruity and nutty.
Each piece of candy is wrapped in a delicate clear thin layer of edible rice paper so that it does not stick to the candy wrapper. Edible rice paper is often used in confections- especially in Japanese candies.
